You may very well be out of luck, sorry. If your replacement iPhone has
Apple's 3.1, chances are that its baseband was already upgraded,
rendering JB impossible at this point in time.
A future relese of RedSn0w may work.

Baseband 101
The Œbaseband¹ is the generic nickname given to the internal components
of the iPhone that handle the phone calls and Internet access. This
Œbaseband¹ is a tiny and unique independent computer system that runs
inside your iPhone, it is separate to the main system that handles the
applications (such as email and google maps) and it talks to the main
part of the phone over an internal communications network. Think of it
like a cable modem or other peripheral that is attached to your home PC
that needs occasional updates. When a software update is released and
presented to you within iTunes the baseband is sometimes updated (to
fix bugs or add new features). The 3.1 update for the iPhone 3G
contains such an update, so running the vanilla updater straight away
with iTunes will reprogram and update the baseband.
BTW, the Mac files you received (*.dmg) are Mac OS X disk image files,
I don´t know of any way to mount them in Windows environments.
If you want to attempt to JB, despite the above. Putting the iPhone in
DFU mode is NOT necessary, simply plug it into your computer (once you
have either the original 3.0 IPSW or a pwned version of either 3.0 or
3.1). Once the iPhone appears in iTunes, from the Summary screen,
simply control-click on "Restore" and you should be able to select the
desired IPSW. Then let iTunes restore the iPhone "to factory
condition", leave it plugged and you will be asked, after the iPhone
reboots, if you want to restore from a back-up or treat it as new
iPhone.
Obviously, backing-up all your data before starting is stronlgy
suggested.
