Instead of trashing the Normal template, try this. Open it up. Select All.
Go to Format Columns and set to 1. Even if it is already set to 1, reset
it. Go to File Page Setup. Change the paper size to the desired default. In
the Normal template, space backspace so that Word knows there is a change to
be saved. Save and Close.
Create a new doc and see if it has the right paper size and behaves. It if
doesn't, Quit Word, drag the Normal template to the desktop (you may want it
later, it holds customizations, so should never be trashed directly) and
relaunch Word. Word will create a new Normal template on launch.
You didn't say what version of Word, so see here for how to find your Normal
template to do all this.
