I'd like to make my categories in a chart start with the number zero.
In other words, I want the bar graphs to be zero, one, two, etc. But
it will only start with one.

Any suggestions?

You need to set up category axis labels. You can then start them at 0 or any
number you want.

The default labels for a bar or column graph in Excel is a list of
integers starting with 1. If you want it to be anything else,
create a column containing your labels. Then click on the graph

Chart > Source Data... > Series tab

Enter the column containing the labels into the box called
Category (X) axis labels:

That should do it.
