References to Sarge instead of testing probably outdated o..

Hi,

I noticed that http://www.debian.org/devel/buildd/setting-up has many
fixed references to Debian distribution code names where variables or
one of stable, testing and unstable should be used.

Since the page was written by Javier in 2004 I assume we have to change
Sarge ==> Etch. Can someone confirm this?

There are probably many other pages affected as well.
