My dog pointed a moorhen hiding in a large patch of reeds. When the
moorhen wouldn't flush, she pegged it. I plucked and drawn it (the
moorhen, not my dog Smile and now wonder how to cook it. Any ideas?

Merry Crimbo everyone Smile

Jonno drop Gyppo an email he's a font of knowledge on olde recipes and the
like I'd like to bet he's heard of a method can't say it would be high on my
list tho' or

I'd be inclined to just take the breast meat wrap in streaky bacon and roast
slowly maybe with a little apricot jam and honey smeared on the breast
before
wrapping. which works really well for chicken too

Merry Xmas Jon!

Just checked a few game recipe books and nothing Sad

I've never tasted Moorhen but if I was to cook one I'd wrap the bird in
bacon and roast it.
