Yes, its me again... the mean lowbie killer who shows no mercy to any
enemy I find unless they can kick my butt unless they are veeery low on
health and are currently fighting a mob.

That said:

I'm starting a new character, an undead rogue. I have been ganked sooo
many times by alliance rogues it sounds like a lot of fun... not being
on the receiving-end but the killer.

I've decided to go all Subtle specc'd (I hope that's what its called).
I like the idea of being harder to see, moving faster while stealthed
and re-stealthing after a sap.

Is this a good idea for my purpose or should I just work on the first
three talents on the top of the tree then go elsewhere for the rest?
Only lvl 20 right now, so my ganking days are far ahead of me.

I hope you are using the slower one in the main hand and not tricked by
the 'dps' =)

Sword spec is the best for Leveling.

Leave the PVP builds for when you plan on doing it for a regular basis.

Early on at least, subtlety is a lot of fun. With full points you're
invisible to mobs and players 4 levels above you if you don't do something
stupid, and there are enchants and items that can crank that up even more.

Vital for the smash and grab strategy is improved sap (90% of the time,
stay stealthed when sapping), and preparation (instantly reset cooldowns
once every 10 minutes). With these two skills you'll be amazed what you can
get yourself into - safely wandering around in instances, harvesting almost
any node without having to fight, and annoying people with sap who never
get a chance to even know who you are. I have a rogue solely for these
reasons - I don't gank but a few dozen horde only know me as a disembodied
giggle they hear while stuck in one place for 20 seconds at a time. *

I definitely recommend that everyone create a rogue alt - it's like a free
pass to parts of the world you can't get to easily any other way. All those
buildings overrun with nasties that you've never seen the inside of? Odd
nooks and crannies of instances? The capital cities of the opposite
faction? All visitable with little danger as a rogue if you've leveled
enough and keep your wits about you. *
