Is this an 'official' publications only question?
If so I vote the Expanded Psionics Handbook, Magic of Incarnum and the
first round of 'Complete' books.
If third party books are allowed: From Stone to Steel and the
Monsternomicon.

Me too.
I would add "Heroes of Battle" (finally the sweet spot between a skirmish
and the need to play a full tabletop wargame), and "Lords of Madness" (I did
a whole campaign around this one) |

If you are talking supplement as "anything beyond Core (PH, DMG, MM1)"
then I'd vote for Spell Compendium, then Magic Item Compendium as my
favorites.

Like a lot of us, Book of Nine Swords. It went a long way toward making
martial characters balanced against spellcasters. This doesn't mean
it's my favorite (though I do quite like it), but 'favorite' is a tricky
thing to decide.
Most used? Quite possibly _Advanced Bestiary_ from Green Ronin.
Most impressed by? I'll agree with another poster, _Monsternomicon_ is
very impressive -- presentation and degree of information, detail, and
color make it very easy to see how it fits into the campaign.
One that impresses me more, for a different reason: Pathfinder Beta. I
find the rules generally quite solid and well-considered, but what
really impressed the hell out of me was the production quality on a
*beta document*. It's better-packaged and more attractive than many
release documents.
It's actually difficult for me to name a *favorite* right now, because
I'm in the midst of gearing up a new campaign. I'm trying to not have a
favorite, just mine a bunch of sources for ideas to put together. I'll
try to give it some more thought.

You would be in the minority over at the WOTC Forums. Many people
there loathe that the Fighter is so "simple" as you put it.

In what way do you mean?
What do you think doesn't fit? The mechanic where each "special move" is
a separate power, or the vaguely wuxia flavour of some of the powers, or
something else? |

For me, the beauty of the Fighter is the incredible simplicity. BO9S
removed that simplicity and made them as complex as a spellcaster. If I
want to play a spellcaster I will. When I play a Fighter I want a
Fighter. He hits stuff. Simple.

i'd probably have the book of nine swords here, but my eberron campaign
was already well along when it came out, so i haven't had cause to buy
it yet.
the environment series (cityscape, etc.) was good. i've enjoyed
reading those, although i've used less from them than i expected.

Spells and Magic - Priest Time Sphere - This book adds a new priest sphere, called Time. It then grants this sphere only to the new class introduced in the same book. Fine... Now the odd part.. They add spells up to level 7... but they only grant Monks Minor access to the sphere... and no..
